Coconut Bread - Homemade Cocktail Bun

Step 1 *Dough

250g (2 cups) all-purpose flour
3g (1 tsp) instant yeast
25g (2 tbsp) sugar
1/4 tsp salt
1 egg
125ml (1/2 cup) warm milk
42g (3 tbsp) soft butter

  • In a mixing bowl: flour, yeast, sugar, and salt. Stir. Add egg and milk. Mix. Soft butter. Continue mixing.
  • Put dough on the counter with a little flour. At first, the dough is sticky. Handle with light pressure. Knead until smooth. Cover until double its size.


Step 2 * Filling

1 cup Desiccated coconut or freshly grated coconut
1 egg
5 tbsp sugar. Adjust, follow your taste.
1/2 cup melted butter. Adjust, depending on the
coconut we're using.
*desiccated coconut absorb more liquid, we might use
less of butter if using freshly grated coconut

  • In a medium bowl: egg, sugar (adjust). Stir. Add the coconut and melted butter. Mix until well combined. Set aside. 

 Step 3 *Topping

3 tbsp cake flour, sifted.
3 tbsp powder sugar, sifted.
3 tbsp melted butter
Adjust the consistency by adding flour or butter
Sesame seeds for sprinkle on top

  • In a small bowl:  cake flour, powder sugar. Sifted. Add melted butter, stir until smooth. Put in a piping bag. Set aside.


Step 4 *Shaping

  • When the dough ready, divide into 6 pieces. Flatten the dough into an oval. 
  • Fill with 1/6 part of the filling. Wrap the filling with the dough. Shape into an oval bun.
  • Put individually or 3 adjacent pieces. Cover 30 minutes. 
  • Pipe the topping on the dough. Make 2 strips. We can do this before or after egg wash. 
  • Egg wash before or after topping. Sesame seeds or coconut on top.

Step 5 *Baking

Preheated oven:
Top-bottom heat 180°C (350°F)
Fan mode 160 °C (320°F)

Baking time: 18 - 20 minutes.
After baking might brush with clear honey if you wish.
